The Port of Leith distillery will be using casks seasoned with sherry from Bodegas Barón to mature its whisky, but while we wait for that whisky to age, they’ve decided to give us a taste of Bodegas Barón’s sherry! This is a solera-aged Oloroso sherry from the 480 year old producer, boasting a huge flavour profile of fresh fruit and complex oak.

Oloroso sherry often shows nutty aromas (especially walnuts), combined with polished / balsamic notes, dried fruits, toasted hints, tobacco and other autumnal aromas. There are noticeable spicy notes in older examples. Often there are also subtle meaty hints, truffle and leather.
